From Valbelluna to Feltrino, from Alpago to Agordino, from Zoldano to Cadore and Comelico, each town has its own “formaj” or cheese which has always been a product of tradition and probably what best represents the magnificent biodiversity of the area.
In the past, almost every family in Belluno had at least one cow. The milk it produced was used to prepare and preserve the wheels at home. Today cheese is produced in small dairies, alpine mountain huts, and in more structured settings; the processes are more modern, but the ancient quality is preserved.
The main ingredient, then as it is today, is always milk from animals that have eaten local hay and grass from pristine pastures on the mountainside.
